Mushroom Pizza
Mushrooms are the best pizza topping. Fight me. 😆 What makes this particular mushroom pizza so good is browning the mushrooms before putting them on the pizza. It cooks off the water thereby maximizing flavor and preventing sogginess. Cooking it on a pizza stone crisps the pizza nicely, but isn’t a requirement. Check out my pizza dough recipe or skip the effort and buy some pre-made dough instead.

Cooking instructions
* Step 1
Gently stretch pizza dough into two 12 to 13 inch circles. Cover them and allow dough to rest for about 30 minutes at room temperature.
* Step 2
Sauté mushrooms in two batches:
* Step 3
Add thyme, oregano, and garlic, and sauté for 1 to 2 minutes more.
* Step 4
Preheat the oven to 450°F. If using a pizza stone, allow it to preheat for at least 10 minutes at this temperature.
Brush top of each dough circle lightly with a little olive oil.
* Step 5
Spread pizza sauce on top of dough. Use more or less than 1/2 cup for each pizza depending on how saucy you like it. Don’t overdo it, though, or else your pizza will be soggy.
* Step 7
Sprinkle each pizza with about 1 cup cheese. In addition to mozzarella, you can also add some shredded Parmesan or Asiago cheese.
* Step 8
I baked my pizzas for 12 to 13 minutes on a pizza stone in an oven preheated to 450°F.
