Kidney bean chocolate cake
Gluten free and delicious. No flour needed :)
Cooking instructions
* Step 1
Rinse and drain the kidney beans.
* Step 2
Use a food process or blender to whizz up the kidney beans and water to form a paste. Set aside.
* Step 3
Cream butter and sugar until pale and fluffy.
* Step 5
Add baking powder, cocoa powder, bean paste and coffee or rum (if using) and combine well.
* Step 6
Pour into cake and level. Bake for 45 minutes at 170C.
* Step 7
Cool cake completely before removing from tin.
* Step 8
Over a bain marie (bowl placed over a pan of boiled water), melt chocolate, butter and syrup. Stir until well combined.
* Step 9
Pour glaze over cake and leave to set. Enjoy!
