Chickpea vegetable sauce
Delicious over roasted courgettes or pasta.
Cooking instructions
* Step 1
Soak chickpeas in plenty if water overnight. Drain and rinse.
* Step 2
Cook in a pan of water for 2 hours at a simmer until tender. Drain and allow to cool.
* Step 3
Add carrot and onion to a pan with the oil and saute until softening. Add onion, garlic and cook for a further 5 minutes or until they begin to turn golden and the veg is tender. Season and add parsley and paprika and cook for 1 minute.
* Step 4
Add chickpeas to the veg mix and 3 tbsp water and blend using a hand blender (or add to food processor). Blend until smooth.
