Bavette steak. Soy portobello mushrooms, sweet potato and greens
Bavette is also known as butcher's cut as they used to save it for themselves. It's one of my favourites and very affordable as it's less "fashionable" than other cuts.
Ingredient

Cooking instructions
* Step 2
Clean the skin and cut the potatoes into wedges. Season with jerk and two springs of chopped rosemary (no stalks)
* Step 3
Put potatos in the oven for 30mins
* Step 4
Clean the mushrooms and place top-down in a hot pan oiled with a dash of sesame oil.
* Step 5
Crush in garlic clove and throw in a dash of soy. Cover for 5 mins
* Step 6
Flip the mushrooms and cook for 5 more mins until the soy has evaporated
* Step 7
Remove the mushrooms and pan fry the greens seasoned with salt and pepper
* Step 8
Oil and season the steaks with pepper
* Step 9
Turn the pan up to high and sear the steaks
* Step 10
With a couple of sprigs or rosemary baste the steaks in their oil
* Step 11
Take the steaks out to rest once cooked to your liking. Meanwhile fry an egg 🍳
* Step 12
Serve with the egg on top. Enjoy with a glass of pinot noir 🍷
