One-minute mug muffin

This low carb simple recipe is a good substitute for toast on a bacon and sausage breakfast. It's somewhere between a scone and a thick omlette. #lowcarb

Cooking instructions

* Step 1

Spoon almond flour into medium sized coffee mug (with baking powder if using, for more rise and faster cooking but I prefer taste without)

* Step 2

Add olive oil, egg, salt and pepper. Mix well with a fork.

* Step 3

If batter is very thick, you can thin with a little milk or cream.

* Step 4

Cook at full power in microwave oven for one minute. If not fully set on top, cook for a further 30 secs.

* Step 5

Remove from mug, slice and butter while still hot.

* Step 6

Eat with accompaniment of choice.
