Grandma Antigone's mamoulia
This is a traditional Christmas sweet from Chios, also used in weddings. You can find it among the traditional sweets of other places in Greece as well. It is a customized version of ma'amouls, small shortbread pastries filled with nuts!
Ingredient

about 40 mamoulia
Cooking instructions
* Step 1
Melt the butter over heat.
* Step 2
Add the milk, where you have already dissolved the sugar.
* Step 4
Mix until the dough doesn't stick to the sides of the pot.
* Step 5
Set the dough aside to cool.
* Step 6
Add the brandy, the baking soda and the eggs and knead until you get a fluffy dough.
* Step 7
If necessary add a little extra flour.
* Step 8
Prepare the filling by mixing all the ingredients (you add as much rose water as is needed. You should have a mixture that is well combined but not runny - you don't want it to leak from the dough).
* Step 9
Shape the dough into small disks of about 7 cm diameter each.
* Step 10
Place a small amount of filling in each disk.
* Step 11
Close off the disks of dough shaping them like small pears.
* Step 12
Bake in a preheated oven at 170°C for about 30 minutes until golden brown.
* Step 13
Mix the icing sugar with the vanilla powder. As soon as you remove the mamoulia from the oven, sprinkle them with orange flower water and then dip them in the icing sugar.
