Tope shark in the oven with tomatoes and caper

Tope shark is usually served with a garlic dip (galeos skordalia). Here we have a different version, where we cook it in the oven with tomatoes.

Cooking instructions

* Step 1

Preheat the oven to 200°C. Place the potatoes in a glass pyrex dish or a ceramic baking dish and mix with 2-3 tbsp of oil. Place in the oven and bake for 20-25 minutes until they start to get tender.

* Step 2

Sauté the onions in the rest of the oil using a deep frying pan and as soon as they are tender add the garlic. Stir a couple of times and add the finely chopped tomato and the caper.

* Step 3

Boil for 2-3 minutes and add the boukovo or the pepper, the oregano and the wine.

* Step 4

As soon as it boils for a couple of minutes taste it and add one to two tbsp of sauce on top of the potatoes.

* Step 5

Place the tope shark slices on the potatoes, cover with the tomato slices, pour the rest of the sauce on top and bake for about 30 minutes until the fish is tender and the tomato slices golden brown.

* Step 6

Set aside for 10 minutes to cool, garnish with the basil and serve.
