Athenian mayonnaise

It is used as the base for Russian salad, fish, prawns, lobster and sandwiches.

Ingredient

Cooking instructions

* Step 1

Dissolve the corn flour in a glass of water.

* Step 2

Continue by boiling it so it will turn into cream.

* Step 3

Let the cream cool in a deep porcelain bowl. Add the egg yolk and whisk until integrated.

* Step 4

Add the oil little by little while whisking. When the oil is integrated, add the mustard, salt, pepper and lemon.

* Step 5

Taste to see if the mixture is adequately tasty and a bit tart. Then it is ok.
