Shakshuka Sorta brunch/lunch for 1

wanted a healthy tasty lunch without eating a load of bread so grabbed the bottom contents of my fridge drwawer and came up with this little number. Easy if you are at home for breakfast lunch.

Cooking instructions

* Step 1

In a large pan on a high heat a few drops of sesame or rapeseed oil, once hot add the red onion and allow to cook for 3 -4 minutes

* Step 2

To the pan add the courgette, yellow pepper, garlic and spices, turn down the heat and allow to cook for another 2mins

* Step 3

Add the chery toms and cook for another 4 minutes. turn the hob onto low and scramble your eggs.

* Step 4

Once your eggs are reday plate up and add your veggies to the plate, season and sprinkl with fresh coriander
