Rhubarb fool (Emily’s inspired British dessert 🍨💗)
I made this delicious delicious dessert with Emily today on IGTV live. Rhubarb is a seasonal fruit/vegetable in the uk at the moment so I am so happy to make this dessert with Emily live. A lot of people in the uk grow rhubarb in their own garden so this is a great recipe to make!!

Cooking instructions
* Step 1
Chopped up your rhubarb into small chunks and add into small saucepan along with sugar, ginger and water. Simmer it on low heat for about 15 min.
(Please see the picture of ginger syrup I use, you can use big stem ginger and finely chopped it)
* Step 2
While cooking rhubarb, add double cream in a mixing bowl, add some icing sugar and whisk it up with hand whisk until the cream thicken.
* Step 3
Once your rhubarb cooked and soft, pour through a sieve, leave the juice in the bowl. Transfer half of the rhubarb stew on another bowl, mash it up and leave it to cool down.
* Step 4
Put mashed rhubarb into the double cream that we whisk up earlier.
* Step 5
Time to dish up: you can layer your dessert whatever you prefer but I put my cream on first, then the rhubarb stew, then add some rhubarb syrup and ginger biscuits crumble. I added some small diced fresh rhubarb for different texture as well.
