Focaccia bread with Mortadella, grilled tomatoes, melted mozzarella and cornichons
I wanted to recreate the focaccia sandwich I had during my trip to Italy. I fell in love with this bread and it soon became my favourite sandwich of all time.
Cooking instructions
* Step 1
Slice focaccia bread in half. Cut one half of the focaccia bread into half lengthways, this will be your panini.
* Step 2
Slice the mozzarella cheese, tomato and cornishons.
* Step 3
To one slice of panini place 3 slices of mortadella ham, a few slices mozzarella cheese, tomato and some chopped cornichons. On the other panini add a few slices mozzarella cheese, tomato and cornichons. Repeat step 3 for the second panini.
* Step 4
Place on a baking tray. Place in the oven, at 170 degrees on the grill setting. Toast focaccia bread and filling until the mozzarella cheese has melted and the tomatoes have grilled.
* Step 5
Remove from the oven. Transfer onto a plate. Place one half of the panini on top of the other. Serve and eat immediately while hot (cut sandwich in half to make it easier to eat, optional).
