Spicy grilled Pineapple with Coconut Cream
Whenever I see fresh tropical fruits on my shopping journey, I have to grab them. The humble Pineapple, one that calls out sunshine 🌞 not only because if its colour but also by the spikes on top that radiates just like the sunshine rays
It's my spiced grilled pineapple served with coconut cream sweetened with maple sirop.

Cooking instructions
* Step 1
Slice the fresh pineapple lengthwise.
* Step 2
Prepare the coconut cream. Whip the cream till soft peak, sweeten with maple sirop. Add desiccated coconut to taste. Cover and leave to chill.
* Step 3
Sprinkle the sliced pineapple with sugar and salt. Cover and leave to marinade until ready to grill.
* Step 4
Heat a heavy skillet, as it heats up place the marinated pineapple pieces on the pan.
* Step 5
Grill on each sides. Add the butter, turn the heat off as watch the butter melt away.
* Step 6
Add some fresh mint leaves to add freshness.
* Step 7
Serve warm with the chilled sweet cream.
