Bubble and Squeak

Bubble and Squeak is an English meal made by frying leftover vegetables from a Roast or Christmas dinner. You can put in whatever veg you like but typically the base is potato. The black bits in my picture are cavolo nero, not burnt! Tastes great with a poached egg and some boiled ham. Bring on Boxing Day!

Cooking instructions

* Step 1

Preheat the grill. Mix all the boiled or leftover veg together, mushing in the potatoes

* Step 2

Melt a large knob of butter in a medium frying pan. Once foaming add the onion and fry for a few minutes

* Step 3

Add the shredded cavolo nero and fry for another 3 minutes

* Step 4

Leave to cook for a few minutes. Pop under the grill until browned.

* Step 5

Add all the potato veg mixture, stir fry then mash down into a thick cake. Grate a load of parmesan over the top. Season with salt and pepper
