Mixed Beans + Chickpea and Veg Medley with Avocado and Paprika Poached Egg-(Cupboard Raid Dinner)

This Dish was an attempt to detox from meat and carbs during this lockdown. Also a very timid attempt on healthier diet.

Cooking instructions

* Step 1

Prep all ingredients i.e vegetables. And drain the beans mix and chickpea.

* Step 2

Sauté Leeks with the smoked paprika and marjoram. Then add the remaining vegs and simmer for 10mins. Add Tom Pesto mixed with the light soy sauce and chives. Season and simmer for further 5 mins on medium heat

* Step 3

Add the beans mix and chickpea and cook for further 2-3 mins. Poach the eggs for an exact 2:45 mins on a medium high heat. (Boiling water and vinegar mix). Use a draining spoon to take out the poached eggs.
