Rosemary and garlic roast potatoes

I love this recipe which is inspired by my online essential course at Leiths. This recipe for roast potatoes is quick and easy and we don’t need to par-boil the potatoes first. It takes only 5 minutes to prepare and 45 minutes in the oven. The roast potatoes are best served straight away after we took out the oven.

Ingredient

Food ration :

2-3 people

Cooking time :

45 minutes
800 grams

potatoes

3-4 sprigs

rosemary

3-4 Tbsp

Olive oil

Cooking instructions

* Step 1

Pre-heat the oven to 200 Degree C

* Step 2

Peel and cut potatoes to pieces 2-3 cms. We prefer they are the same size for them to be cooked thoroughly.

* Step 3

Place potatoes in the bowl with rosemary, oil and crushed garlic. Mix them and season well with salt and pepper. (We need good amount of salt to season this as we did not par-boil potatoes with salt before roasting.) Then place them into roasting tin.

Bake them in the oven for 45-50 minutes, check them and turn them half way or around 25 minutes.

* Step 5

Potatoes are best served straight away.
