Microwave Duxelles
I have been making duxelles this way for a little over ten years. This freezes very well so I make little packets to store in the freezer for whenever I want an omelet.
Cooking instructions
* Step 1
Rough chop the mushrooms and place in a food processor bowl. Process the mushrooms until they resemble a coarse meal.
* Step 2
Heat the butter in a microwave safe souffle dish uncovered at 100% for 2 minutes or until melted.
* Step 3
Add the mushrooms to the melted butter and stir to coat. Microwave at 100% for 5 minutes.
* Step 4
Place the shallots and parsley in the food processor work bowl and process until they resemble a coarse meal as well.
* Step 5
Remove the mushrooms from the micro. Stir in the shallots and parsley, kosher salt, and pepper. Micro at 100% for 8 minutes.
* Step 6
Use immediately or allow to cool and freeze
