Electric Lemonade

Electric Lemonade

My mother use to make this for my brother and I when we were kids. It is deliciously refreshing on a hot summer day. I wanted to use up 12 Meyer lemons I had left over from some limoncello I made for the new year.

Ingredient

1 hour
1 1/2 cups

sugar

1 cup

water

1 1/2 cups

lemon juice

Cooking instructions

* Step 1

Pick two lemons that you will peel zest from. Scrub them well under running water to remove pesticides and any particulate matter. Using a vegetable peeler, peel wide strips of 1.5 lemons and set aside.

In a small saucepan, heat the sugar and 1 cup of water over medium heat until the sugar is dissolved.

Stir in the lemon peel and let come to a low boil. Reduce heat and simmer uncovered for about 5 minutes. Let cool.

Strain out the lemon peel and transfer to a pitcher. Stir in the lemon juice and chill in the refrigerator.

Stir in club soda and serve over ice.
