CopyKat Penrose Sausages

Back in the 70's, Penrose Sausages came in a jar. I have fond memories of my father buying a jar and trying to hide it behind a head of broccoli in the back of the fridge. My brother and I would always find it anyway and leave him just one. Boy would he have a fit. lol. You can still get individually packed Penrose Firecrackers but I don't think they taste as good.

Cooking instructions

* Step 1

Add all of the ingredients to a medium size pot; with the exception of the sausages, and bring the mixture to a boil at medium heat for 5 minutes.

* Step 2

Place the sausages in a clean and sterile 1 quart mason jar and pour the hot brine over the sausage; filling the jar to just cover the sausages.

* Step 3

Seal the jar with a lid and ring. Let cool on the counter and then place in the refrigerator for 7 days.

* Step 4

On the 7th day, open a cold beer and enjoy!

* Step 5

I would like to add, please be sure to use a precooked sausage. Otherwise, you are just asking for botulism or ptomaine poisoning.
