Pancake or Meetha Pooda
Easy Fluffy Pancakes Recipe at Home is better than any store bought a premix.Pancakes have a long history, dated back to thousands of years and being cooked on stones. Pancakes are prevalent in every culture. A thin flat almost cake-like texture made from batter and cooked on a griddle is almost like our very own meetha pooda. Make Easy Pancakes Recipe at home with the basic batter of eggs, flour, milk and melted butter. Sometimes batter is made from buttermilk just like my mom used to use a little yoghurt in the pooda. Usually, pancakes are drizzled with Maple syrup but you can use honey or any sweetener of your choice.
I made a few for Karina, my daughter-in-law and then went about making Mickey Mouse and heart shaped ones for the apple of my eye and he just lapped them up.

Cooking instructions
* Step 1
In a bowl, sift the flour, baking powder, salt and sugar. Make a well in the centre. Take the milk, egg and melted butter and blend mixture until smooth. Now pour this mixture into the well of the flour and fold in mixing into a smooth batter. Do not beat the flour. The egg makes the pancakes light and fluffy. Add a tsp of Vanilla extract for heightened flavour.
* Step 2
Heat a griddle or frying pan over medium-high heat and spoon a tsp. of butter on it. Pour a ladle of the batter onto the griddle, using approximately 1 ladle and let it spread. Flip the pancake after bubbles rise to the surface. Brown on both sides.
* Step 3
Cook on one side and flip them over. I love this pan I bought recently. It is great for uttapams, pancakes and even omelettes.
* Step 4
Serve hot with a drizzle of maple syrup or honey as I did and a blob of fresh cream. Use whole wheat flour for healthy pancakes.
