Navratri Vrat Sweet Potato Chat or Shakarkandi Chat

Different chats were created in different parts of India. Aloo or Potato Chat is a modest street food in Delhi and almost all of northern India. Even Sweet potato or Shakarkandi must have originated here. It consists of fried pieces of parboiled sweet potato mixed with generously amount of spices and lemon.
Different varieties of Chat
There are different types of chat and, and the right methods of eating each. But at the root every chat dish has a base, crunch and sauces or chutneys which bestows a unique and addictive flavour.
This Sweet Potato Chat is especially made to spice up the Navratri Vrat or fasting days. I am licking my fingers and having more.

Cooking instructions
* Step 1
Boil and peel the sweet potato. Once it's boiled cut it into bite sized chunks.
Heat oil in a pan and fry the sweet potato chunks. Fry them till light golden brown.
* Step 2
In a bowl, add the coriander, red chilli powder and chat masala and mix.
Then add the rock salt and mix well
Add the sweet potato and toss it well to combine the ingredients.
Squeeze the lime and mix to make a tangy Sweet Potato Chat.
* Step 3
Add some pomegranate pearls, roasted peanuts, fresh coriander, chat masala, mint leaves and serve.
