Red Chili Sauce

This red chili can be used for enchiladas or adovada.

Ingredient

3 tablespoons

kosher salt

1 tablespoon

oregano

1 tablespoon

onion powder

2 tablespoons

olive oil

Cooking instructions

* Step 1

Tear stems and empty seeds from pods. Rinse pods in cold water.

* Step 2

Bring pods to a boil in water and boil for 5-7 minutes until soft.

* Step 3

Strain the pods saving 2 cups of liquid.

* Step 4

Place boiled pods into food processor and blend.

* Step 5

Put the emulsified pods into a cone sieve and collect pulp in a shallow dish. This process removes the hard skin particles and left over seeds.

* Step 6

Return pulp to the food processor with garlic, 1-2 cups of liquid from the boiling, salt, oregano, and 2 tablespoons of olive oil.

* Step 7

Reheat sauce with meat or dilute with chicken stock.
