* Step 1

Preheat oven to 350°. In a large bowl, whisk the first 4 ingredients. In a large pot, heat oil on medium high and cook the brisket until browned, 5-6 minutes per side; transfer to a roasting pan. Add the wine mixture to the pot and bring to a boil over high heat, scraping up any brown bits, then pour into the roasting pan. Arrange the vegetables around the meat. Cover with foil and transfer to the oven. Cook until tender, turning the brisket halfway through, 3 1/2 - 3 3/4 hours.

* Step 2

Let stand 20 minutes before slicing; cool before storing. Freeze the brisket and pan juices in freezer bags. Freeze up to 2 months. Thaw in the fridge overnite.
