For my Mother's Birthday Eggplant Lasagna
First time I served this my mother loved it. It is here birthday so I made it for her again and she still loves it.
Cooking instructions
* Step 1
Get all the ingredients together preheat oven to 425° Fahrenheit.
* Step 2
Brown the meat and mix the sauce.
* Step 3
Oil the pan. Peel and slice the aubergine thin. Line the pan with the aubergine. Add some of the meat sauce.
* Step 4
Spread it out. Add the ricotta cheese. Dice the aubergine.
* Step 5
Add on top of the ricotta cheese. Add the cheddar cheese and rest of the meat sauce. Top off with the mozzarella cheese. Put in oven and bake for 50-60 minutes.
* Step 6
Let rest 15 minutes before releasing the springform pan. Serve I hope you enjoy!!!
