Sausage and Yellow Rice Soup

We usually eat this a lot, but not as a soup, and not with as much saffron. I am recovering from a surgery and need lots of liquids. So this is why you see so many recipes for soups lately. I truly believe that you can reshape any recipe into a different way of cooking it. Like this one.

Ingredient

3-1/2 quarts

water

1 tablespoon

saffron threads

1 teaspoon

salt

1/2 stick

butter

Cooking instructions

* Step 1

In a pot melt the butter. Add the salt, saffron, and water.

* Step 2

Remove casing from the sausage if any. Slice the sausage into medallion pieces. Add to the pot when it boils.

* Step 3

Add the rice envelopes. Stir well and simmer for 45 minutes. Stirring as needed.

* Step 4

Add the English peas. Allow to rest 7 minutes covered. Serve I hope you enjoy!!!
