Cooking instructions
* Step 1
Take the loaf of bread and cut 1 heel off. Carefully hollow out the loaf leaving sides and remaining heel intact.
* Step 2
I butterflied the roast, season with garlic, salt, and pepper.
* Step 3
Heat the pan, a large cast iron pan, or any pan, sear beef on all sides. Then, reduce the heat, let cook turning as needed. Cook to your desired doneness. Set the meat aside adding the butter on top. Slice the onion and mushrooms.
* Step 4
In the same pan as cooked beef, add mushrooms and onions. Sauté till onion are caramelized. Measure and add the Wine to pan, let reduce.
* Step 5
Take the bread you removed from the loaf. Put in the pan soaking up left over juices. Carefully stuff the beef, by laying it on the bottom of inside the loaf of bread. Mix the mushrooms, onions, and bread pieces, then put them into the loaf, on top of the meat. Place the end/ heel back on loaf wrap with food wrap, and add a lot of weight on top squishing whole loaf.
* Step 6
Let it press for an hour minimum. Then remove weight, slice across side to side, and serve. This makes about 8-10 sandwiches. This is a very old recipe from the Edwardian Era, I hope you enjoy.
