Mexican Piggy Cookies

My husband says these taste very similar to the traditional ones he grew up with, but using vegetable shortening instead of butter would be best. I got the cookie cutter on Amazon.

Ingredient

1 1/2 tsp

baking soda

1 tsp

salt

2 tsp

cinnamon

1 1/2 tsp

vanilla

1

egg

2/3 cup

almond milk

6 cups

AP flour

Cooking instructions

* Step 1

Preheat oven to 350°

* Step 2

Cream together sugar, butter, soda, salt, cinnamon, vanilla

* Step 3

Add molasses, egg and milk. Mix.

* Step 4

Gradually add flour and mix thoroughly

* Step 5

Flour table, cutter and rolling pin

* Step 6

Roll out dough to about 1/4 inch thick and cut as many cookies as you can.

Place cookies on parchment lined baking sheet

Roll out and cut cookies until all dough is used

* Step 9

In small bowl, whisk egg. Using small brush, paint top of each cookie

* Step 10

Bake 15-17 mins, let set up on pan for several minutes before transferring onto a wire rack to cool completely

* Step 11

Once completely cool, store in air tight container.
