New Year’s Day Black-Eyed Peas

I love black-eyed peas any time of the year, but they’re part of the traditional meal around our house on New Years Day. This is one of those recipes where “to taste” matters! Most folks ignore this step. I’ma taster myself, I start out with minimal seasoning, taste it, add a little bit of this or that. My hubby doesn’t particularly care/like them, he’ll eat a bite “for tradition”. Lol. I found this recipe a few years ago, justa tad different from what I normally fix, his response…those are better than what you’ve fixed before! 🙃

Reduce heat to simmer, cover pot, simmer on low heat 2-1/2 to 3 hours, or until peas are tender. **Taste broth and a few peas. Add more salt, pepper or garlic powder to your taste preference.
