Batata sabji
Easy batata sabji. Can be eaten with chapati or as masala for masala dosa.

Cooking instructions
* Step 1
Boil the potatoes in advance.
* Step 2
Heat the oil in a pan on medium heat. Follow tip on how to heat mustard oil.
Once hot add mustard seeds and let them splutter. Then add cumin seeds and let them sizzle.
* Step 3
Now add green chilies, ginger and curry leaves. Saute for 30-40 seconds.
* Step 4
Add hing and turmeric powder.
Immediately add onions and sprinkle a little salt to speed up the cooking process.
* Step 5
Cook till onions become soft.
Now add boiled potatoes, salt and sugar. Mix well & cook for 2-3 minutes.
* Step 6
Lastly, add lime juice and cilantro. Stir and serve.
