Cooking instructions

* Step 1

Dissolve yeast and sugar in warm water. Stir well and set aside. Yeast should bubble/foam. If it does not, then either the water was too hot, not hot enough, or the yeast was bad. Put flour in 3-4qt mixing bowl. Make a well and add yeast mixture and milk. Place dry ingredients (Italian Seasoning, Garlic, Cayenne Pepper, White Pepper, and Salt) outside of well. Stir and mix the dough until it cleans the sides of the bowl.

* Step 2

Turn dough out onto floured surface and knead for 5-6 minutes or until smooth. Dust with flour if dough is too sticky. Put dough into greased bowl (olive oil) and turn to coat. Cover with plastic wrap and damp kitchen towel. Set in a warm place to rise, about 1-1.5 hours.

* Step 3

Take dough out and knead for 2 minutes. Oil pan and dust with corn meal. Roll dough out and stretch to fit pan. Cover pan with damp kitchen towel and let rise for 30 minutes.

* Step 4

Take pan out and gently pat center of dough leaving a 3/4" ring of risen dough around the outside. This will create a well for the sauce and cheese.

* Step 5

Sauce: Combine all ingredients in sauce pan, bring to a boil. Let cool. Spread 8-10 ounces in the well of the dough. Cover with Mozzarella and Feta cheese. Sprinkle salt and drizzle with olive oil.

* Step 6

Bake at 375 for 25 minutes. Broiler can be used to brown cheese.
