Roti Turki is Ayam/Poğaça (Tavuklu)/Turkish Bun(Chicken Filled)

There are many ways to make the Turkish bun, making the dough using yogurt instead of milk. The dough using yogurt usually giving a crunchy outside and soft inside when it's hot. The recipe is my sister in law’s recipe. As usual, I expand the filling instead of cheese or pepperoni; I used the chicken filling. Happy trying!

3 hours (waiting the dough to rise)
2.5-3 cups

yogurt

3 tbsp

veg oil

1 tsp

sugar

1.5 tsp

salt

1.5 tbsp

oregano

Cooking instructions

* Step 1

Chicken Filling: dice the chicken, onion, garlic, and carrot. Prepare the saucepan, put the oil, heat it. Saute the onion till golden brown, add the garlic, black pepper, and the chicken./Isi Ayam: potong dadu ayam, bawang merah, bawang putih, dan wortel. Siapkan panci, masukkan minyak, panaskan. Tumis bawang bombay hingga berwarna cokelat keemasan, tambahkan bawang putih, lada hitam, dan ayam.

Mix, close the top wait till the chicken is cook. Add the tomato paste, carrot, sweet soy sauce, and salt. Keep cooking it till its water is drained. Add the oregano before you turn off the heat, and cold it./Aduk, tutup panci tunggu sampai ayam matang. Tambahkan pasta tomat, wortel, kecap manis, dan garam. Terus masak sampai airnya habis. Tambahkan oregano sebelum Anda mematikan api, dan dinginkan.

Dough: prepare the basin big enough to mix all the ingredients. Put the yogurt, oil, egg, salt, mixed yeast liquid (yeast, sugar, and warm water, mix it and wait for 2 minutes), and mix all the ingredients using a hand mixer./Adonan: siapkan baskom yang cukup besar untuk mencampur semua bahan. Masukkan yogurt, minyak, telur, garam, cairan ragi campuran (ragi, gula, dan air hangat, aduk dan tunggu selama 2 menit), dan campur semua bahan menggunakan hand mixer.

Once the batter is evenly blended, add the flour. Mix all the ingredients using a spatula (no hand touched). Mix all the dough till no batter stick to the spatula. Cover the basin leave it for 15 minutes./Setelah adonan tercampur rata, tambahkan tepung terigu. Campur semua bahan menggunakan spatula (tidak boleh disentuh tangan). Aduk semua adonan hingga tidak ada adonan yg menempel pada spatula. Tutupi baskom biarkan selama 15 menit.

Take the dough fist of your hand, open it, and fill it with the chicken. Cover the chicken and shape it to make the bun, put it on the tray. Leave it for an hour to rise. Grease the bun with the egg yolk, & sprinkle the black cumin or sesame, bake it for 35-45 minutes./Ambil adonan, buka sebesar kepalan tangan isi dg ayam. Tutupi ayam dan bentuk menjadi roti, taruh di atas nampan. Biarkan selama 1 jam smpi mengembang. Olesi roti dg kuning telur, taburi jintan hitam/wijen, panggang slm 35-45 mt.

Poğaça or Turkish bun is ready to serve hot, warm, or cold for breakfast, tea time, or just for a snack./Poğaça atau roti Turki isi ayam siap disajikan panas, hangat, atau dingin untuk sarapan, teman minum teh, atau hanya untuk camilan. Bon Appetit! Selamat Makan!
