Basic Smoked bbq fatty
A basic version of a fatty. Don't be afraid to get creative with it
Cooking instructions
* Step 1
Start by laying out bacon in a 8x8 bacon weave on a peice of waxpaper
* Step 2
Stuff your ground meat in a gallon size Ziploc bag and flatten it out getting all the air out
* Step 3
Cut bag open on the 2 sides sprinkle bbq rub on meat
* Step 4
Take cheese and lay it out in a line the middle leaving room on the edges and roll up ground meat with help of the bag seal ends and seam so cheese won't leak out
* Step 5
Take meat log and place on bacon weave and roll up sprinkle with more bbq rub
* Step 6
Place fatty seam side down on preheated 250 smoker
* Step 7
Smoke for 2-3hours till middle is 165. You can turn the smoker up to 350 for the last 5-10mins to crisp up bacon more
* Step 8
Let rest 10-15mins and slice
