Egg Roll Stir Fry
This is a super simple recipe that kind of reminds me of a deconstructed egg roll. It comes together quickly and makes a good, light lunch. This is the base recipe I start with usually, then from there I'll throw in whatever extra veggies I have on hand (peas, mushrooms, peppers, etc.). If you want it to be more filling, you can stir in some cooked grains to it (like rice or quinoa). This also is good for meal prep and reheats very well.
Cooking instructions
* Step 1
Heat the olive oil in a large skillet over medium heat. Once its hot, add the sausage and cook until it is browned throughout. Then add the sesame oil and the garlic. Cook and stir until the garlic is fragrant, a minute or so.
* Step 2
Add in the cabbage, onion and carrot. Season with the salt and pepper. Then drizzle in the soy sauce. Cook the veggies until they have softened up, about 5-7 minutes. Stir in the sesame seeds, then serve it up.
