Oatmeal Raisin Energy Bites
I'm just recently jumping on the energy bite bandwagon and this is a recipe I concocted based on a mix of my two favorite cookie flavors (peanut butter and oatmeal raisin). The recipe is versatile though and there are tons of add in's and substitutions that can be used. For the sticky sweetener/binder you should have 1/3 cup total, so you could use agave instead or use all honey. Maple syrup may not bind well completely on its own.
Cooking instructions
* Step 1
Mix everything together in a medium mixing bowl, adding the sticky sweeteners in last. Mix with a wooden spoon until everything is blended.
* Step 2
Cover and refridgerate for at least 30 minutes.
* Step 3
Remove the oat mix from fridge and roll into balls (about 1 tbsp. of mix each).
* Step 4
Store in a container in the fridge or freeze to have them last longer.
