Broccoli Soup

Cooking instructions

* Step 1

Salt the water & bring to a boil.

* Step 2

Cut the broccoli & remove the stems & leaves. Wash well & add to the boiling water. Boil for 5 minutes & then check with a knife. It should cut through easily.

* Step 3

Remove & transfer to a blender. Add just enough of the stock or water that was used to boil the broccoli as it has good flavour. Add the cheese & bend till smooth. Adjust the consistency & seasoning according to your liking.

* Step 4

Serve warm with croutons, garnished with curry or cilantro leaves & pepper.
