Homemade Vegetable Soup
I got this idea from watching the create channel on something about cooking. I made my soup with a lot more than the show did. The show did a onion mushroom soup with salt and pepper. I thought it would be a good base but needed lots more. This is the result.
Ingredient

15 mins
Cooking instructions
* Step 1
In big saucepan, heat up some olive oil
* Step 2
Sauteed mushrooms, green onions, elephant ear garlic til you can really smell the mushrooms, about 3 to 5 minutes
* Step 3
Add water, all spices, all herbs, all seasonings, chicken broth, all vegetables (everything BUT mashed potatoes and milk)
* Step 5
Reduce heat to medium low and simmer 30 minutes
* Step 6
Remove 1 cup broth from soup and place in mixing bowl
* Step 11
Add instant mashed potatoes to soup
* Step 12
Return to boil til soup thickens
* Step 13
Add water, stirring til desired thickness
