Carrot,coconut stir fry (carrot thoran)
Carrot thoran ..it’s of atypical Kerala style,but an easy recipe .typical Kerala recipe have grated coconut,green chilli,shallots,curry leaves crushed slightly .I have used grated frozen coconut directly,skipping a few ingredients.

Cooking instructions
* Step 2
In a wok,add 2tbsp of oil,when hot,add mustard seeds and when it starts to splutter add rice,red chilli and curry leaves.sauté for few seconds.add carrot,green chilli,turmeric powder and salt and water.mix well.cover and cook for 5 minutes in medium heat.
* Step 3
Open the lid,make space in the middle,and add grated coconut.cover coconut using carrot and cook for 5 minutes in Low heat.
* Step 4
Mix well and serve hot.this is a side dish for rice and any main curry,like sambhar etc.
