Lemon Poppy Seed Scones

A winning combination, I like anything with lemon and poppy seeds, including these easy scones.

425 grams (3 cups)

all-purpose flour

198 grams (1 cup)

sugar

25 grams (3 tablespoons)

poppy seeds

1 tablespoon

baking powder

1 teaspoon

kosher salt

150 grams (10 tablespoons)

unsalted butter

1/3 cup

milk

Cooking instructions

* Step 1

Adjust oven rack to medium position and preheat to 375°F. Prepare a baking dish by lining it with parchment paper.

In a food processor combine flour, sugar, poppy seeds, baking powder, and salt, and pulse to combine. Add butter and pulse until the mixture resembles a coarse meal.

In a separate bowl, combine egg, lemon juice and zest, and milk, and whisk to combine. Pour wet ingredients over dry ingredients and pulse until a dough forms, but take care to not over-mix.

On a lightly floured surface, pat dough into a 10- by 6 1/2-inch circle and cut into triangular scones.

Place scones on prepared baking dish and bake for 18 minutes, or until scones have browned.

Optional lemon glaze: while scones are baking, combine 1/3 cup confectioners sugar and a couple of tablespoons of fresh lemon juice until the desired consistency is reached; brush glaze on scones while still hot. Let cool and serve.
