Blood Cockle with Sweet and Spicy Sauce
I was cravings for seafood, then I bought clam at the market. I made it with Padang Sauce (Sweet-spicy) because this sauce is best for this clam 😝
Cooking instructions
* Step 1
Clean and brush the shell. Soak blood cockle in the water with salt (1/2 tsp) and lime juice (1/2 tsp). Soak for 1 hour.
* Step 2
In the pot, boil clams and bay leaf for 20 minutes. Strain the clam and set aside.
* Step 3
Toss garlic, shallot, and cayenne pepper to blender.
* Step 4
Heat 1 tbsp oil on skillet and saute the sauce, bay leaf, kaffir lime leaf, lemongrass, galangal, ginger and onion. Saute until fragrant. Add water, kethup, chili sauce, sweet soy sauce, oyster sauce and salt. Mix it well
* Step 5
Add the clam in and cook for 10 minutes.
* Step 6
Blood Cockle with Sweet and Spicy Sauce is ready to serve ✨
