Masala Chai (Masala Tea)
Making this tea, we don't usually measure our spices and ingredients here are measured only for reference. Some of us like our spices strong, kids, on the other hand, like it mild (My daughters fav tea).
Cooking instructions
* Step 1
Dried Spices can be used whole or crushed. Depending on whom we serve this tea to, here, we usually use them whole as kids like this tea mildly spiced. If you like it stronger, you can crushed these spices using mortar and pestle.
* Step 2
First, over medium high boil cinnamon stick, cloves, cardamoms, peppercorns and ginger slices with 2 cups of water. Bring to a boil.
* Step 3
Add tea bags. Reduce the heat to medium low and simmer for another 7-10 mins depending on your desired consistency and colour. You will have a deep dark colour of tea at this point. Next, add 1 cup of full cream milk or evaporated milk.
* Step 4
Once boiled, Sweeten with 2 tablespoon of condensed milk. Stir to mix. Remove from the heat. Strain the chai with a sieve into cups. Serve hot/warm.
