Buttery Salt & Pepper Tofu
Cooking instructions
* Step 1
Prep all ingredients:

* Step 2
Drying the tofu - remove tofu from the heat. Drain water completely and transfer tofu onto a clean kitchen towel to absorb excess liquid. Place another layer of kitchen towel and press gently to absorb excess moisture. Transfer to a bowl.
* Step 3
To coat the tofu - spread few tablespoons of corn flour on a plate. Crack and beat egg. Pour beaten egg into tofu bowl, mixing gently to coat the tofu evenly. Next, tranfer egg-coated tofu to the corn flour plate. Sprinkle more corn flour over the tofu and coat tofu evenly in corn flour.
* Step 4
In batches, deep fry tofu in hot oil and leave undisturbed for few minutes until tofu is set. Then gently move them around so tofu cubes are fried evenly. Remove from hot oil. Use kitchen towel to absorb excess oil.
* Step 5
To assemble - Heat a wok and add 2 tbps of butter. Add minced garlic, give it a quick stir for few seconds, add chopped chilies and curry leaves. Fry for another 25-30 secs. Add fried tofu, salt and pepper seasonings. Stir to mix and coat tofu cubes evenly. Taste and adjust seasonings accordingly. Serve hot.
