Fettuccine in oil and garlic sauce (Aglio E Olio)
Cooking instructions
* Step 1
Gather and prep all ingredients - mince garlic, get enough chili flakes/crushed red pepper and pan fry meat slices. And below is the type of store-bought beef slices we usually use. You can also use pancetta or similar meat slices with extra fat.
* Step 2
To prep meat slices, pan fried them, then cut into thin strips and chop into bits. See pic below.
* Step 3
Next, cook pasta noodles in a pot with enough water, some salt and some oil. We are going to cook this al-dante, as to be still firm when bitten. Check your pasta when cooking. Few minutes before pasta is about done, to al-dante, sauté garlic in Olive Oil for a minute and then add chili flakes.
* Step 4
Sauté until garlic is lightly brown and by now, pasta noodles should be ready. Transfer pasta using a tongs to the pan, reserving few tablespoons of the liquid in case it's needed later. Toss pasta in the pan and sprinkle some salt (use as needed). Toss until well-combined. Add few tablespoons of reserved pasta liquid only if it's very dry. Taste and adjust accordingly. You can add your pan-fried protein now or use it later for toppings along with grated cheese/grated parmesan cheese.

Garnish and best served warm.
