Sautéed Sliced Chicken Franks with Anchovies

Ate this in #Malaysia many years ago. Still love it and prepare it once in a while when ever I have anchovies. Unlike in Malaysia, #anchovies here is rather scarce. So, yea, I Checked online if the restaurant still serves this in their menu, they still do! The #brewhouse! 😁 It costs RM15.80. Reminiscing the old time, I love recreating this simple dish at home. Its a #pubsnack that is popular among many.

Cooking instructions

* Step 1

A - Heat 1 C of oil in a deep frying pan. Fry anchovies until crispy or until anchovies turn to lightly brown. Remove and drain. Set aside.

* Step 2

B - Prep B. Slice all ingredients (except brown onion) at a slight angle to make them appear bigger or 'longer'. Then, Slice brown onion into rings.

Cooking the dish - Heat up 2 - 3 tbsp of oil in a wok or deep frying pan. Add sliced frankfurters or sausages. Stir. Add chili paste. Mix well. Add brown onion rings, sauté quickly for a minute or less. Stir in the rest of sliced ingredients in B. Season with C. Sauté for a minute or two, then turn the heat off. Add fried anchovies. Stir to mix everything. Dish up.

* Step 4

Note: Can be used in fried rice. Prepare left over rice and a tbsp of finely minced garlic. Heat up enough oil depending on the amount of rice. Sauté garlic until lightly brown. Add rice. Stir fry for few minutes until rice is well mixed and it absorbs the fragrance of the garlic. Season to taste with chicken seasoning powder. Just a little as we have well seasoned sautéed sausages. Add sautéed sausages with anchovies. Stir to mix well. Dish up.
