This is a quick delicious way to have egg salad. It can be brought on a picnic and assembled at your picnic. It also makes a fun appetizer in small little bite size lettece cups!

hard boiled eggs, peeled
2 tbsp
celery, finely minced
1 tbsp
fresh chives, chopped
1 tbsp
fresh parsley, chopped
1 tsp
fresh lemon juice
1/2 tsp
dijon mustard
6 slice
of bacon, cooked crispy
Cooking instructions
* Step 1
Chop eggs into a bowl add remaining egg salad ingredients except bacon and lettece leaves and mix well
* Step 2
Fill each lettece leaf with equal amounts of egg salad, crumble baon eveny over egg salad. Serve with the garnishes of tomatoes, pickles and radishes to sprinkle on if desired
