Slow cooked Beef and Beans
I fancied a change from a beef stew and baked potato so decided to cook this very slowly then add sliced potatoes on top and oven bake to finish.
Crispy potatoes a huge hit with my kids! I bought them ready sliced but I love this recipe its a slow cook so you can step away and wait for the magic to happen.

Cooking instructions
* Step 1
Finely chop and saute the onion, and the whole shallots in the olive oil until cooked.
* Step 2
Add the mince to the pan and let is gain colour. Add the stock cube, tomatoes, beans and mushrooms.
* Step 3
Add the herbs and transfer to the oven at 120C for a few hours until the meat is very tender. You may need to add more stock.
* Step 4
Transfer to a serving dish and add the sliced potatoes, sprinkle with salt and pepper. Return to the oven until the potatoes are cooked and crispy around 35 minutes at 190C.
