Cod with Mushrooms in Lemon Sauce

Cod with Mushrooms in Lemon Sauce

It's a bit elaborate, but the finished product tastes wonderful with buttered rice. The boiled eggs are more of a preference. I would rather leave the garnish off the top.

Cooking instructions

* Step 1

Grease a baking dish with 1 teaspoon of butter. Sprinkle garlic in the dish and place fish on top.

* Step 2

Dust with salt and cayenne and flour (2 teaspoons worth.)

* Step 3

Pour milk over fish and place in 350°F oven.

* Step 4

When fish is flaky, next brown the mushrooms in a sauce pan with remaining butter. Set aside.

* Step 5

Begin sauce-- Stir remaining flour into the butter in the pan on low heat.

* Step 6

Gradually stir in fish juice from baking dish. Bring to a boil. Cook for 2 minutes and constantly stirring.

* Step 7

Mix the egg yolk in a small bowl and stir in a few teaspoons of hot sauce to warm the egg yolks. Do not scramble.

* Step 8

Add egg mix to the pan stirring well. Stir in lemon rind and lemon juice.

* Step 9

Pour sauce over fish and return to oven for 5 minutes. Or until the sauce is gelled or set.

* Step 10

Spoon mushrooms over the fish and place hard boiled slices around the dish.

* Step 11

Return to oven for 2 or 3 minutes to warm before serving. Recommended with rice.
