Oven Roasted Artichokes
Every time I saw these at our local Costco, I always had the impulse to give them a try. I challenged myself to cooking with them, and they were so delicious! You won't be able to stop eating these.
Cooking instructions
* Step 1
Once you've washed your artichokes, chop off the tips like so.
* Step 2
The tips of the leaves are very pointed, so clip them off with a pair of scissors.
* Step 3
Slice each artichoke in half vertically. You'll see a purple section and a soft, sponge-like pith underneath. Scoop these portions out with a spoon. Watch out when you're handling the purple section, since its very thorny.
* Step 4
Soak your artichokes in a lemon water solution (juice from half a lemon + enough water to cover the artichokes) so they don't change change while you're prepping them.
* Step 5
Boil water in a large pot, and squeeze in the leftover half of the lemon. Place in the prepared artichokes and boil for just under 20 minutes or so.
* Step 6
Once boiled, drain in a sieve. Start preheating the oven to 220℃ / 425°F.
* Step 7
Lay a sheet of aluminium foil and position the artichokes on top. Pour on the ☆ seasoning mixture. Make sure you get some in between the leaves as well.
* Step 8
Once you've roasted them for 20-25 minutes, you're done! Peel them leaf by leaf, and enjoy their texture with your teeth. You can eat them all the way to the center.
