Carrot Shira-ae with a Double Dose of Sesame Seeds
Carefully prepared shira-ae is delicious, but this simply made version turned out surprisingly rustic and tasty If you use a pre-made sesame sauce, it can be quickly seasoned; making it easy to prepare even a gourmet style shira-ae!
Cooking instructions
* Step 1
Drain the tofu by breaking it into large pieces and place into a colander. If you're in a hurry, cover it with a small plate!
* Step 2
Julienne the carrot and parboil in a pot of boiling water with salt (not listed in the ingredients) to desired tenderness, then drain in a colander.
* Step 3
Add the sesame and seasonings to the drained tofu and mix well. There's no need to use a grinding bowl to mix; just stir it with a spoon or fork.
* Step 4
To add a bit of color variation, I used black sesame seeds.
* Step 5
Once the shira-ae tofu mixture base is well seasoned, add the carrots. Gently toss so the carrots don't break.
* Step 6
Go easy on the sugar; the carrot gives a mild and delicious natural sweetness to the shira-ae. Season to taste.
