Chicken Simmered in Tomato Sauce with Cheese and Penne
I sometimes cooked chicken in tomato sauce.
When I added cheese and penne pasta, it was delicious. Since then, this has been one of my family's favorite dishes.
Cooking instructions
* Step 1
Remove the fat from the chicken. It's easier with kitchen scissors.
* Step 2
Cut into large bite-sized pieces, and sprinkle with salt and pepper.
* Step 3
Heat the olive oil in a frying pan, and sauté the garlic and onion. When the onion becomes translucent, remove from the pan.
* Step 4
Add more olive oil into the same pan, and brown both sides of the chicken. Wipe off the excess oil with paper towels.
* Step 5
Add the onion, canned tomatoes, white wine, and consommé, cover with a lid, and simmer over medium heat. Adjust the flavour with salt and pepper. Since the cheese will be added later, don't put too much salt.
* Step 6
Simmer until the liquid has mostly evaporated. In the meat time, cook the penne pasta.
* Step 7
Add the cooked penne pasta, and mix. Spread the cheese all over, cover with the lid, and cook over low heat until it's melted, then you're done. Serve on a plate, and sprinkle with parsley on top.
