Sig's Potato, Cucumber and Pea Salad

Thought of putting two of my favourite salads together. Potato and cucumber /dill salad with peas. Served them with homemade white bread, eggs, tomatoes and bock wurst #lunchideas #budgetbasics #stayingathome

Ingredient

Food ration :

2 good servings
450 grams

new potatoes

4 tablespoons

rapeseed oil

3 tablespoons

white wine vinegar

Cooking instructions

* Step 1

Boil potatoes in skin for about 20 minutes, remove skin. Heat 1 tablespoon of rape seed oil, chop onion finely, saute the onions until soft but not browned in the oil. Add the stock, season thoroughly with salt and pepper to taste. Add the vinegar then the whisk the rest of the oil into the dressing until of creamy consistency. Add Potatoes, then slice cucumber on mandolin or slicer, add dill. Season further to taste.

Let stand for at least 3/4 of a hour serve and garnish as you wish, hope you will enjoy.
