Sig's leftover frittata

Had some roast potatoes, red pepper, spring onions, bacon cubes and a few mushrooms left over from the weekend, did not want to waste them so I combined them. #lunchideas #stayingathome

Cooking instructions

* Step 1

Combine oil and batter in pan, heat in pan add the bacon. Heat the bacon but do not brown the bacon as it will cook further as you add other ingredients. Add all other ingredients apart from the eggs. Cook everything through until softened. Season to taste.

* Step 2

Whisk the eggs thoroughly and pour them over the top of the mixed foods in pan. Make sure you cook on a medium heat as not to burn the eggs. Make sure the egg mix has almost cooked. Loosen carefully. Put plate over pan and carefully turn the pan so that the frittata drops onto plate, slide back into pan and finish cooking. When cooked sludge out of pan. Enjoy with a salad or on it's own.
